We love every color in the rainbow ๐ŸŒˆ so much that we combined them with another thing we love almost as much... WAFFLES! But even better (drum roll please!), we made them gluten-free, vegan, low carb and keto-friendly Chaffles! Amazing, right? Choose your favorite Ultima flavor from the Ultima rainbow and enjoy this colorful sweet treat. ๐Ÿ‡๐Ÿ‰๐ŸŠ๐Ÿ’๐Ÿ‹

Makes 1 Waffle

Ingredients:

  • 1 tablespoons flaxseed meal
  • 2 ยฝ tablespoons water
  • ยผ cup low carb vegan โ€œmozzarellaโ€ cheese
  • 2 tablespoons coconut flour
  • 1 tablespoons low carb, vegan cream cheese, softened
  • Favorite Ultima Flavor

Directions: Preheat waffle maker. In a small bowl, mix together flaxseed meal and water. Let stand for 5 minutes until thickened. In another small bowl, mix together vegan cheese, coconut flour and cream cheese.

To the flaxseed meal bowl, stir in a scoop of Ultima. Then add to the cheese mixture. Stir until color is evenly distributed.

Spoon mixture onto the center of the waffle maker. Close and let cook for 3 to 5 minutes or until waffle is golden brown and set. Remove from the waffle maker.

Continue making waffles using the recipe above and using different Ultima flavors to achieve a rainbow waffle stack.
